Ladies, join us for this totally unique dining experience. Flourish Events, in conjunction with Tunnel Hill Mushrooms, Chef Paul Foreman and Knocklofty Spirits, invite you to an unforgettable evening where history, flavour and community come together.
Step into the incredible world beneath Mount Rumney at Tunnel Hill Mushrooms — a space where an historic railway tunnel has been transformed into a thriving mycology wonderland and a memorable setting for a long-table feast celebrating local produce and bold flavours.
This event begins with canapes and a welcome drink, followed by a shared table dinner featuring an exceptional menu of mains, sides and desserts crafted with creativity and care. Each course has been thoughtfully paired with drinks to complement the flavours and elevate the experience.

Pao de Quiejo, jerky oyster mushrooms, shiitake oil.
Tamari cured honey brown mushroom, pickled ginger, Tunnel Hill mushroom miso aioli.
Button mushroom, chicken and tarragon souffle.

Mushroom and Black garlic braised lamb shoulder.

1 gin cocktail or sparkling on arrival.
1 glass of red or white wine with the main course.
1 quince gin cocktail with dessert/cheese.

Dietary Requests
Please advise of any dietary requests in the booking form - however if you do not like mushrooms, this is definitely NOT the event for you.
Getting There
Please note we have not chartered a bus for this event — guests can make their own way to Tunnel Hill Mushrooms - located at 2 Old Coach Road, Mount Rumney by car (carpool preferred for parking purposes), get dropped off and picked up or use rideshare facilities.
What to Wear
May in Tasmania will be getting chilly. Whilst there is heating, please wear layers and bring a jacket so you don’t get too cold — the toilets are a few minutes’ walk away from the tunnel itself.
Please also wear appropriate footwear as you will need to walk on gravel pathways and some uneven terrain upon arrival and departure.

His extensive career includes celebrated head chef roles, leading kitchens to regional and national recognition, and now consulting and catering through his own business — creating unforgettable food experiences grounded in technique, passion and quality.
